My chef wanted a salad. Voila: chicken avocado salad recipe! So his wish is fulfilled!
I just got a few avocados and I needed to use them as soon as I could. I thought to myself why not make a really simple and super tasty treat to surprise my Chef and his palate.
Why?
What are the benefits of avocado? Well they can help you lose weight because of their natural fiber which is also good for your digestive system. In addition to the fiber, every cup of avocados has almost 3 grams of protein, and 11 grams of carbohydrates. They have amino acids, and 12 different minerals.
Avocados also have 13 different vitamins And one cup of avocados also gives you 160 mg of omega-3's. They can also help lower your cholesterol...
Wow!
But hey...we like them really because they just taste so good. Right?!
Try it yourself! You’ll find out too. But I promise you: it tastes as good as it looks like!!!
Who said you cannot have summer all year round? Now you can prove them wrong!...
1 chicken breast
1 avocado
2 tablespoons olive oil
Salt and freshly ground pepper to taste
Vegeta
10 cherry tomatoes
1 small cucumber (sliced and cut into quarters)
parsley (fresh and chopped finely)
3 tablespoons olive oil
1 tsp brown sugar
2 tsp mustard
4 tsp apple vinegar
Wash the chicken. Dry with paper towels. Cut into very short strips.
You have options to prepare the chicken depending on the time of season.
You can saute for 5 - 10 minutes until golden brown...or...
You can grill in the oven 220°C/425°F with the chicken placed in a baking dish (like I did). Rub the chicken strips with salt and pepper. Coat with a little olive oil. Grill about 10 minutes, until the strips are browned….or(!)...
You can grill on a BBQ until it’s your usual crunchy crispy goodness! :)
Set aside.
Place the avocado in a baking dish and bake for 5-6 minutes at
Remove from the oven and allow to cool. Peel and cut into chunks once they’ve cooled enough.
Prepare the mustard sauce. Pour all the sauce ingredients into a small jar. Close the jar with its lid and shake until mixed.
Cut the tomatoes in half. Place in a bowl with the avocado chunks. Add the cucumbers and chicken.
To serve our avocado salad recipe, pour the mustard sauce to cover evenly. Sprinkle with chopped parsley.
For a nice variation, you can add a hard boiled egg cut into chunks into the salad.
