This easy chicken casserole recipe is sooo easy you can almost create it out of thin air!
I’ll create this for a special evening with family or friends.
Why is this so easy?
Most casseroles you have to saute AND bake. But this recipe you saute and simmer all on your stove top! And you're using very few utensils. Quick and easy.
I bet you thought all casseroles were prep and bake! Well, now you know.
This recipe uses white wine - so make sure, if you're going to drink some, to drink it after you’ve finished cooking! ;)
5 chicken breasts
2-3 tablespoons of butter
2-3 carrots
1-2 medium onions
1 celery
1 medium broccoli
1-2 parsnips
salt and pepper to taste
3-4 glasses of white wine
1-2 pinch of rosemary
heavy casserole dish
vegetable peeler
knife
cutting board
Wash the chicken breasts thoroughly. Dry with paper towels.
Put the chicken breasts into a big and heavy casserole dish with some butter. Place the dish on the stove over medium heat.
Saute for each side of the breasts for about 2-3 minutes.
Wash and peel your veggies: all the carrots, onions, celery, broccoli and parsnips.
Cut everything into medium bite size pieces.
Take out the chicken breasts from your casserole dish and put them aside on a plate.
Put
all the veggies into the casserole dish and saute for about 5-8
minutes. If necessary add some more butter. Veggies should be crispy and
bright in colour!
Add the rosemary to the sauteing vegetables. This bring up the freshness and flavor. It also smells really good too! Season also with some salt and pepper to taste.
Then return your chicken breasts on top of the vegetables and cover with white wine - all at once.
Cover your dish and cook over medium heat for one hour. Check often to make sure. If necessary you could cook as long as 1½ hour.
After this is done, all the juices and wine will combine. We’ll be left with a very tasty sauce! :)
First: this is MY tip! You can see by my pictures I used red wine instead of white. It's just as tasty too! So....
Like any casserole recipe, I like that I don't have to use extra serving dishes. I can use the actual cooking dish for serving, too
Place the finished casserole dish on the table. With a serving spoon place some on your plate. Mashed potatoes go great with this dish. Add some parsley if you like, for garnish.
And to keep my Chef happy, a nice light green salad on the side is always welcome.
Now, you can have some wine!!!
