Do you have a really large gathering planned?
Then this baked chicken and stuffing recipe is perfect!
Why?
Because it's very easy to prepare!!
And you know what else?
It will look just beautiful too, when it's finished, because of the colourful, yet simple garnish!!!
Chicken (a big one)
1 large clove of garlic
Salt and pepper to taste
Juice from half a lemon
250g of butter
Vegetables:
Wash chicken under running water, and then dry.
Rub with garlic clove.
Then pour lemon juice over it, and rub with salt and pepper.
Set aside in a cool place for 30 minutes.
Wash all the vegetables well - celery, carrots, onion - and then chop them coarsely.
Melt butter on low heat. Add diced celery, carrots and onion. Continue heating on low until vegetables soften.
Add pepper, sage, basil, and oregano*.
*You can substitute, or add, additional spices, if you like!
Finally, add the bread crumbs, stirring well. Set aside to cool.
Once the stuffing cools, add eggs, raisins, and 1 teaspoon of salt, and mix well.
Preheat oven to 190°C/375° F.
Stuff the chicken with prepared stuffing. Pin opening with toothpicks. Place in baking dish.
Bake for 2 to 3 hours. It might take shorter or longer time to bake. Always double check please.
Of course remember to use its own juice to baste periodically!
Drain canned peach halves and fill with blueberries.
Place chicken on platter when it is finished baking, and garnish with prepared peaches and rosemary.
This dish is the best when served with rice or baked potatoes, and green vegetables!!!
