What's special with this chicken and noodles recipe?
I'll tell you! No funny stories:
It has plenty of just rich, zesty tomato flavour in it. It's all you need really, don't you think?!
I sure think so!
For those who think nothing would surprise them anymore, a recipe like this is a creation that can stand on its own.
That's good in my cookbooks!
Because I don’t have any more funny stories to tell today!
500 g of chicken breast
1 medium onion
1 garlic clove, chopped
400 g of red pepper
2-3 tomatoes
2 tablespoons of tomato sauce
5-6 tablespoons of tomato paste
3-4 tablespoons of oil (your choice)
1 cup of chicken broth
400 g of noodles
1 tablespoon of parsley, finely chopped
salt and pepper to taste
measuring spoons and cups
kitchen knife and chopping board
saute pan (skillet)
cooking spoon
cooking pot
colander
I'm going to sneak in on of my Chef's tips now: adding zucchini to this recipe makes it even more delicious...so I did! Carrying on.....
Wash the chicken breasts thoroughly. Dry with paper towels.
Cut the chicken into small pieces.
Wash and peel all veggies. Cut into medium size pieces.
In a pan heat the oil over medium heat. Then add the chicken breast pieces.
Season with salt and pepper. Continue sauteing for a few more minutes. Make sure that everything is cooked thoroughly.
Add the onion, garlic, red pepper, tomatoes and one tablespoon of tomato sauce. Continue to cook everything for a few minutes.
Next, add the tomato paste, the chicken broth, and the rest of
the tomato sauce. If you really need to, season with just a little more
salt and pepper.
Simmer over medium heat for about 5 - 7 minutes.
In a mean time cook the noodles according to the package instructions.
When the noodles are finished, mix them together with all the other ingredients.
Another tip as you may have already found out, is you can use spiral pasta instead of noodles like I did! Why? Just because I wanted to and I could! My Chef also likes spiral pasta, so....
This chicken and noodles recipe is a complete meal in itself!
To enhance your serving place some parsley on the top. Add a little wine and some garden salad on the side....
