This chicken and peppers recipe is exactly what it says!
It’s still winter outside as I’m writing up this recipe. In case you can't tell I’m getting a bit tired of winter...
I’ve decided to bring some colours into our house. That’s because we
don’t have enough sun these days. Some red, green, orange, yellow - what
a great combination - this is exactly what I need! Summertime in the
middle of winter!

2 boneless, skinless chicken breasts
1 medium onion
½ cup of oil
1 tablespoon of honey
1 tablespoon of lemon juice
salt and pepper to taste
1 medium green pepper
1 orange pepper
1 red pepper
1 medium cucumber
10 cherry tomatoes
2-4 green onions, sliced
1 medium lettuce
dry basil
measuring spoons and cups
kitchen knife and chopping board
2 mixing bowls
large cooking pot
Wash the chicken breasts thoroughly. Dry with a paper towel. Cut them into medium long pieces. Place in a bowl and set aside.
Peel and wash the onion. Cut into small cubes. Place in a bowl. Set aside.
Season the chicken with salt and pepper. Next, add the ½ cup of oil, lemon juice and honey. Add the onion and mix everything well. Cover and put into the fridge for 2 hours.
In the meantime:
Wash all your peppers. Cut them into long strips and set aside.
Wash your cucumber. Cut it into medium chunks and also set aside.
Wash your cherry tomatoes. Cut them into halves; set aside as well.
Wash your green onions and cut into small slices; set aside.
After 2 hours, put your chicken into a large pot. Saute over low to medium heat until golden brown colour. It should be crispy. Season if necessary. Set aside to let it cool down.
Wash your green lettuce and cut into medium shredded pieces.
Combine all the vegetables we previously set aside together, and toss well.
Sprinkle with basil. Decorate with the cherry tomatoes and green onion!
Serve immediately!
