This garlic chicken and potatoes recipe was inspired by my friend. He sent me one of his favorites.
I thought this recipe was so simple I had to share it with you. Just chicken, some potatoes and one baking dish.
You never know what you have in your house until you open your fridge and see what you have. You just need to be creative. So I took my friends recipe and added a few other little ingredients to spice things up my own way.

Preheat oven to 400°F/200°C. Brush a large baking dish with melted butter.
If you like you can lightly line the dish with bread crumbs to prevent everything from sticking to the pan.
Peel and rinse the onion. Dice into small pieces. Wash and dry the mushroom. Cut into slices.
Saute the onions first over low to medium heat so that they will
caramelize. Then add the sliced mushroom. Continue to saute for about
five minutes. Set aside when done.
In large bowl mix together the oil, BBQ sauce, Vegeta, garlic powder, and salt and pepper.
Peel and rinse the potatoes. Cut into cubes. Wash and dry the chicken breasts. Cut into small cube-like pieces.
Add the cubed potatoes and chicken to the sauce. Coat them
thoroughly with the mixture. Place the coated chicken and potatoes
mixture into the baking dish. Then add the mushroom and onion.
Also here: if you’re using a chopped green onion, now is the time to add it!
Bake everything for 55-60 minutes. This is important: check often and stir the ingredients in the baking dish every 10 to 20 minutes until everything is thoroughly cooked. Crispy and golden as always!
Once the chicken is cooked, remove from oven and top with cheese and a little parsley.
Place everything back in the oven for just five minutes until the cheese
is melted. The melted cheese makes and keeps this garlic chicken and
potatoes recipe quite uniform and consistent.

Excuse me Chef, I’ll give the suggestions this time! When you’re ready to serve, spoon portions onto your plate and sprinkle with some more parsley.
Some wine and fresh pickles on the side will make for a lovely meal.
