Wow - a chicken bacon recipe! You NEVER know when the next wave of inspiration will strike!!
I have my Chef to thank for this one.
He sent me a text to tell me he bought some chicken bacon. He was so proud of this news. Being a ‘chick-atarian’ he won’t eat regular bacon so he was happy to find this….
5 - 6 chicken bacon strips
200 g cooked chicken breast
2 - 3 tablespoons olive oil
1 medium onion
Peppers red, green, orange and yellow
4 - 5 broccoli florets
2 cups of pasta (you can use veggie pasta like I did!)
250 g of mozzarella cheese
2 cooking pots
colander
kitchen knife
chopping board
cooking spoon
Add 6 cups of water to a cooking pot. Place over high heat. Add one
teaspoon of salt. Bring to a boil.
Place another large cooking pot over low-to-medium heat.
Peel the onion. Rinse and dry off. Cut into cubes. Place into the pot.
Cut the chicken bacon strips into small pieces. Add to the sauteing onions. Continue warming for a few minutes until everything gets a light golden color.
Rinse and dry the bell peppers. Cut into strips. Add the pepper strips to the sautéing onion and chicken bacon.
Wash the broccoli florets. Cut into smaller sizes if necessary. Add to the cooking veggies.
Cut the cooked chicken breasts into medium pieces and add to the saute. Mix all together.
Finally cut the mozzarella into cubes and add to the saute until melted.
Because this chicken bacon recipe was such a taste treat because of its main ingredient(!), we went light on the sides with just a tomato cashew salad.
To serve, simply put some pasta on you plate.
Then you just add some of the saute!
Done!
