Do you think this chicken drumstick recipe could be for you?
I’ll bet you’re like me:
...after all day at work I’m Hungry!
And, I happen to have all these chicken drumsticks in my fridge. (Why not? They’re inexpensive and store well).
And my chef is waiting....instead of helping me. (OK maybe you don’t have a chef like that).
And, on top of it, I love potatoes so much I could eat them every day.
So here is my idea for a quick and easy, but very elegant dinner - for you and for me!
4 chicken drumsticks
500 g potatoes
1 medium onion
3 tablespoons olive oil
250 ml chicken broth
1 tablespoon honey
1 tablespoon lemon juice
salt and pepper to taste
1 tablespoon chopped parsley
Preheat oven to 180°C/350°F.
Wash the chicken drumsticks thoroughly. Dry with paper towels.
Wash and peel the potatoes. Then cut them into large cubes.
Wash, peel, and chop the onion.
In a baking dish...
...the drumsticks and potatoes, and drizzle with 1 tablespoon of olive oil.
Sprinkle with salt and pepper.
This is important! We’re only using some of the chicken broth right now: Pour just 200 ml of the broth over everything.
Bake for about 30 minutes covered.
After 15 minutes, turn over the drumsticks and pour over the rest of
the chicken broth. We do this because a chicken drumstick gets very dry
in the heat. This is since there’s not a lot of fat inside a drumstick.
Adding the broth over time makes our drumsticks come out tender and
juicy.
Mix honey with lemon juice, add the rest of the olive oil (2
tablespoons). Pour this mixture over the chicken. This is for two
reasons: the chicken gets a nice golden color. It also gets a crunchy,
tasty skin at the same time.
Bake for the remainder of 15 minutes. In the meantime you can
prepare a simple side dish of lightly sauteed green beans and onions.
Remove the chicken and potatoes from the oven and sprinkle with parsley.
Start the dinner serving with a nice garden salad and your chicken
drumstick recipe will be the perfect solution for your busy day!
