Here’s my (poetic) inspiration for orange chicken leg recipes!
My Dear Summer:
I am trying to take as much as you give to me. I have a BBQ in my house, I have chicken ready to grill, so now I'm making a new recipe for you!
Monia!
We’re all just waiting for the Sun to show itself and to enjoy the warm weather while it is still here. I don't want to waste my time, so I’m getting ready to create a new recipe.
It will be golden, crunchy....and orange!
Just the way I (and my Chef) like!
I miss summer after it passes from fall to winter... that’s why I try to keep as much of the spirit of summer, as I can, into my recipes and into my website. Lots of fun and good times. I hope you feel that way too!
And I hope you like my orange chicken leg recipes!
Be sure to let me know!!
8 chicken legs
1 medium onion
3 tablespoons oil
juice and zest of 1 orange (grated orange peel)
juice of 1 lemon
2 tablespoons honey
1 glass of tomato juice
a few drops of Tabasco
salt and pepper
First we prepare the marinade.
Wash and peel the onion. Chop into very fine pieces.
Heat the oil in a pan over low heat.
Add the onion and saute.
Add the orange juice and zest, the lemon juice, honey and tomato juice.
Stir and cook over low heat for about 13-15 minutes. Season with Tabasco sauce, salt and pepper. When done set everything aside.
Rinse the chicken legs thoroughly with water. Dry with paper
towels. Place them into a bowl. Pour over the marinade. Store covered
for 2-3 hours in the refrigerator.
After this time, remove the chicken legs from the marinade. Place on a BBQ grill and grill for about 15 minutes on each side or until totally crunchy!!
Brush the legs often with the orange marinade while grilling.
You can also heat them on the stove top, as I show below, if you're cooking indoors.
Well, we have a variety of textures and aromas, let’s add something appropriate with our side dish.
We’ll match our crunchy orange chicken leg recipes with an elegant green salad topped off with a lemon dressing and some nice crunchy walnuts!!
As you can see, my Chef and I had sauteed potatoes and carrots as well!
PS: I love you, Summer! :)
