What can I say for this Chicken Parmesan Recipe?
It's fabulous! Check out the ingredients...
And the zesty Parmesan cheese rounds out the great flavor.
Ready to get started?! My Chef is...
300g of diced barbecued chicken breast
750g of bite-sized bread cubes
2-3 tablespoons of wine vinegar
4-6 tablespoons of olive oil
1 minced garlic clove
Salt and pepper to taste
3-5 small tomatoes
1 medium onion
A few fresh basil leaves
1 Small lettuce
50g dried raisins
4-5 tablespoons grated Parmesan cheese
Preheat oven to 250°C/480°F.
Spread bread cubes in a single layer on a baking sheet. Bake for around 3-5 minutes. Be sure to keep them from burning: we want them just crispy and toasty!
Remove them from the oven when done. Set aside to let cool.
It's important you read this next stop before you actually do it.
We're going to whisk the wine vinegar and olive oil together with the minced garlic. But you have to do this right. So first off...
Start with just 2 tablespoons of vinegar and 4 tablespoons of oil and test to see that the blend is right. We want to keep our dressing from becoming very oil-y!!
Once you've got the right blend add the garlic. Sprinkle with just a little bit of salt and pepper to taste.
Wash the tomatoes and cut them into medium pieces. Place in a large salad bowl.
Peel and wash the onion. Then slice it into rings.
Wash and dry off the basil. Chop coarsely.
Add both the onion and basil to the tomatoes. Pour over the dressing. Mix all ingredients together lightly.
Wash and dry off the lettuce. Then tear it into small bite-size pieces. Then place the leaves into the salad mixture.
Add the bread cubes, diced barbecued chicken breast, and dried raisins.
Mix everything together and let stand for 15 minutes so that it blends well.
It's almost ready to serve...
To finish our chicken Parmesan recipe salad, garnish with Parmesan cheese.
This makes a great light lunch. Have with some bread sticks and a little wine! What a wonderful way to have a romantic get-together with your special other. And have leftovers for another time!!
Bon appetit and Na zdrowie!
