This Chicken Pasta Salad recipe combines chicken with...what else?...pasta!!! Give it a try!
It also has Edam in it which is a favorite of mine. Plus it has lots of other tasty surprises like chives and parsley.
The dressing for this salad is a wonderful blend of tomato, mustard and lemon!

But!....
If you like to try a different combination, either have a look to the photos or read ahead to my Chef's tips to find out some extra ingredients you can use or change. I'm sure this will be a favorite for you and yours for a long time!
100g pasta
200g of cooked chicken breasts or legs
150g Edam cheese, grated
1 medium onion
Chives
Green lettuce
Parsley
3 tablespoons of tomato purée
2 teaspoons of mustard
A few tablespoons of oil
Juice from one lemon
Salt and pepper to taste
Cook your pasta according to the directions on the package. When
done, drain the pasta. Rinse and cool it down with cold water. Place
into a large salad bowl.
Cut the chicken into strips and add it to the pasta.
Next, we’ll add the grated Edam cheese.
Peel and rinse the onion.
Cut the onion into cubes. Keep this outside of the salad bowl for now as we’ll add this later.
Chop the chives into tiny bits. You can add them now or set them for later aside as well with the onions.
Wash the lettuce thoroughly and dry gently with paper towels. Chop the lettuce into bite size pieces and add to the salad bowl.
Combine the dressing ingredients in a bottle. Close the bottle tightly
and shake well to combine the ingredients well. Then pour the dressing
over the chicken-pasta-cheese combo in our salad bowl.
Now add the onions that we’ve been saving all this time (and chives if you didn't add them already)!
Now mix everything together well!
Serve with extra lettuce and sprinkle with some parsley.
For added variety, you can also add chopped red pepper, or a tomato cut into cubes, if you like.
Now! You may notice from our pictures, I made some substitutions and additions. I decided to the green part of some green onions. I also added some shredded carrots - just to add a little color for the presentation!
