Want a truly special chicken pizza recipe?
One with a tasty, delicious sauce? And it has to be quick and easy (of course) - how would you like that?

This pizza has all that and more: it has a very special pesto sauce made with arugula. You have to taste the wonderful flavour it adds. And the best part: we’re going to grill it on our barbecue with pita!!!
That is absolutely unique among all my BBQ chicken recipes!
The grilled pita looks like a mini pizza pie crust with a nice crisp crunch, but with less calories and fat. So not only is it healthy for the grown-ups, but kids will love it too because of its small size!

1 grilled medium skinless chicken breast
4 pita breads
4 handfuls of arugula
2 tablespoons of Olive oil
2 garlic cloves
2 tablespoons of grated cheese
Salt and pepper to taste
3 tomatoes halved
2 olives, thinly sliced
Preheat the barbecue grill to medium temperature.
To make the pesto combine the arugula, cheese, garlic, and oil in a blender. Then add around 1-2 tablespoons water to loosen the pesto if needed. Season with salt and pepper just to taste.
Chop the grilled chicken breast into small bite sized pieces.
Lightly brush both sides of each pita with a bit of the olive oil.
Place pitas on pre-heated grill and heat until they get lightly toasted and crunchy.
Turn pitas and top with equal amounts of chicken (cut into small pieces), cheese, tomatoes and olives. Grill for about 3 - 4 more minutes, making sure (of course) to avoid burning!
When they become golden brown and crispy they are ready!
Now take your pesto sauce, and pour over each pita pizza.
