This chicken rice casserole is one of those wonderful recipes that makes meal time at the family dinner table so memorable.
It's an especially nice meal for kids too. They can be really picky eaters. Since most kids love simple foods like rice, this is sure to be a real winner with them. 4 skinless, boneless chicken breasts
salt and pepper to taste
2 medium onions chopped
1 cup uncooked white rice
150 ml of chicken broth
1 diced tomato
1 tablespoon of finely chopped parsley
Preheat the oven to 270°C/520°F.
Wash the chicken breasts thoroughly. Then dry on paper towels.
Peel and rinse the onions. Chop into small pieces.
Season the chicken breasts with salt and pepper.
In a medium bowl stir the rice, the chicken broth, the diced tomato, and only ½ of the chopped onions together. Set aside.
Chop the chicken breasts into bite sized pieces.
In a separate bowl, mix the breasts with the rest of the chopped onions. Transfer to a pan with a little bit of oil. Sautée at very low heat for 2-3 minutes.
Pour the previously made rice mixture into a medium size baking dish. Pour the just sauted chicken mixture on top of the rice. Cover very tightly with foil and bake for 45 minutes to 1 hour.
Check often to keep from burning.
Remove from oven when done and let cool slightly for five minutes.
