Chicken salad WITH GRAPES?!!
Of course! Why not?!
This is a perfect salad for the beginning of September.
You have grapes.
You have nuts.
And...
...you don’t feel like cooking today!!!
We’re using leftover roasted chicken in this dish.
It’s simple. Easy. Tasty!
But my Chef is asking: Where is the lettuce??!
This is a Polish recipe. Salads in Poland don’t always have lettuce in them.
But we have nuts! Nuts are good for your brain, so it doesn’t hurts to add a bit. (My Chef can certainly use some!! :)
And we have beans as well!
So our salad has lots of proteins.
Are you ready then to make wonderful grape salad?!
Great! Here we go...
250 g roast chicken |
Use Blueberries instead of Grapes!

100 ml of oil
100 ml wine vinegar
Juice of one fresh lemon
1 tablespoon rosemary
Salt and pepper to taste, just a bit
kitchen knife

measuring cups
measuring spoons
large salad bowl
cooking pot
steamer tray
Cut the chicken and cheese into bite size cubes.
Slice the onions into very thin sections.
Rinse the grapes and cut in half. Remove any seeds.
Wash and rinse the radishes. Trim the tops and cut into small pieces.
Clean and rinse the beans. Trim the endings. Steam for 5-10 minutes over boiling salted water.
Get the nuts ready to go into the salad.
Blanch the tomatoes. Do this by quickly dunking the tomatoes in boiling
water for about one second. That’s all. Rinse under cold running water
to remove the skins. Cut in half and remove the seeds.
Finally, cut the
tomatoes into small slices. Add them and the nuts to the salad.
Chop the onion greens.
Mix the onion greens and the remaining ingredients - green beans, the cheese, the chopped
chicken, and radishes - to the salad. Toss well
together.
Prepare the salad dressing. Just mix all four ingredients together: the oil, the vinegar, the lemon juice, and the rosemary. Season lightly with salt and pepper. Use a whisk to blend everything thoroughly.
Season the salad with just a tiny bit of salt and sugar. Add pepper to taste.
Pour the prepared dressing on the salad and set aside.
Leave in a cool place for about 2-3 hours.
Before serving, sprinkle your salad with the fresh parsley.
And if you like, garnish the serving bowls with some fresh lemon slices!! This will look very lovely and appetizing.
And it’s healthy too!
