Chicken Sausage?
Last week I asked my Chef if there is such a thing. So he took me shopping and showed me!
And of course as always....I got an idea! :)
As we were finishing shopping, I picked up some brown rice and some veggies. I prefer the brown rice over white as it is healthier. And I just love the flavor better.
Then I started working on my recipe.
Sausage is very popular! But recipes for the chicken variety are hard to find.
So I hope to correct that oversight!!
Right Chef? I am always right!!
2 chicken breasts
1 chicken sausage
2-3 tablespoons of oil
1 cup of brown rice
1 medium onion
1 clove of garlic
1 medium pepper
1 small can of tomato sauce
1 bay leaf
A dash of allspice
salt and pepper to taste
2-3 cups of chicken bouillon
2 tablespoons of fresh chopped parsley
Start by cooking the brown rice. Wash and rinse completely. Place the rice into 2½ cups of water with one teaspoon of salt. Bring to a boil over high heat. Stir once and turn heat on low to simmer, covered, for 30-40 minutes. Let stand for five minutes when done.
We’re adding the rice with the rest of the ingredients at the end of this recipe so time yourself accordingly when preparing the rest of my dish!
Wash the chicken breasts thoroughly. Dry with paper towels. Cut into small cubes.
Place a tablespoon of oil into a pan and place over medium heat. Saute the cubed chicken breasts in the pan until they have that golden color and crunchy texture.
Set aside.
Cut the chicken sausage into small slices.
In a different pan, add another tablespoon of oil. Place over low to medium heat. Saute the sausage slices in the pan for about 5-7 minutes.
Next, slice the onion, and saute for a few minutes with the sausage.
Then chop the garlic and saute with the onion and sausage for 2 more minutes.
Wash the pepper. Cut into thin slices and add to the onion, garlic and sausage.
The rice should be done by now because we’re going to add it to the mixture as well! Mix everything together and heat for another 5-8 minutes.
Finally, add the cooked chicken breasts, chicken bouillon, tomato sauce, bay leaf, and allspice. Stir until it’s blended well. You can just a touch salt and pepper to taste if you like!
Simmer everything on very low heat for another 5 to 10 minutes, covered.
Serve when hot! Big surprise :)
Garnish with some fresh parsley.
Serve with a simple garden salad.
