Chicken Spinach Recipe Sandwich!
I bet you can hear your kids now:
"Bleeeeeeeegh!
Spinach?
Mom, are you crazy!
I don't like spinach!"
Mom: I have two promises for you!
This will surprise them.
Why?
In addition to chicken and spinach, we have mushrooms and Cheese! Always a kids favourite!!
The way this recipe is prepared is what will win them over: just like grilled cheese sandwiches.
So what is my other promise?
No more bleeeeeeeeeeeeegh!!
OK! Now it's time to get serious!
300 g fried chicken breasts, chopped
1 tablespoon of oil
250 g of mushrooms
2 tablespoon of butter
8 slices of bread
300 g of fresh spinach
150 g of sliced cheese
Salt, pepper to taste
kitchen knife & chopping board
measuring spoons & measuring cups
saute pan (skillet)
cooking spoon
sandwich grill
- or -
large skillet & cooking spoon
Heat the oil in a skillet over medium heat.
Wash the mushrooms and dry them off. Next, cut them into slices.
Toss into the skillet and sautée them until they get a nice, light golden colour.
Season them with a little bit of salt and pepper. Set aside briefly.
Make sure the spinach is washed thoroughly. Pat dry with paper towels.
Now we'll start to make the sandwiches:
If you like you can some add butter to the sandwich before adding the toppings.
Start by topping a bread slice with mushrooms, chicken breasts and
spinach. Add a single layer sliced cheese, and top with bread.
Now, there's two ways do the next step:
One is to grill the sandwiches in a sandwich grill until the cheese gets melted and the bread is nice and toasty.
or...
You can prepare them a la grilled cheese style. You do this by first buttering the outsides of the sandwiches. Then you place them in a skillet over medium heat. Finally you heat them on both sides until you have a nice golden, toasty colour.
And the cheese is melted of course!

Our chicken spinach recipe sandwich is as easy and simple as it can get. But there's lots of room for options!
We used hamburger buns (as you can see from our pics). We added tomatoes. And we didn't grill them. (The chicken and mushrooms are already cooked).
When serving, and depending on the age of your children, you can cut each sandwich diagonally.
Or, if they're very young, cut them diagonally twice into smaller triangles.
Serve with something crunchy like fresh celery or carrot sticks!
