This delicate Chicken Tomato Pasta recipe is cultured and refined. Yet still a simple dinner for two.
Besides combining lots a familiar ingredients in a delicate way, it’s relatively simple to prepare as well...like many of my chicken and pasta recipes!!
OK Chef - wake up! It's time to cook....
100 g of pasta (long variety)
200 g of chicken breasts
1 clove of garlic
1 small onion
10 g of fresh basil leaves
50 g of cheese
30 ml of oil
150 g of cherry tomatoes
Optional: 100 g of olives of your choice
1 teaspoon of finely chopped parsley
Cook the pasta in lightly salted water, with a little bit of oil, for a few minutes. Simply follow the information on the package.
Drain, but retain a little bit of the cooking water, so as to keep your pasta moist, while preparing the rest of the dish.
Set aside.
Wash chicken breasts. Dry with paper towels. Cut them into small pieces.
Sauté in a skillet over medium heat until they become soft and a gorgeous golden brown colour.Peel and crush the garlic.
In a blender, process the basil, garlic, and cheese. Blend everything until it’s become well chopped.
Add the oil, and continue mixing everything well together.
Put the cooked pasta in a large bowl, stir in the blender mixture and toss everything well.
Cut the onion into thin wedges.
At the end, add sautéed chicken, cherry tomatoes, onion wedges, and olives (optional).
Combine everything well together.
On top, sprinkle the finely chopped parsley and serve!
For an intimate and elegant touch serve with a little wine and the evening's yours!
