I love the taste of crispy fried chicken recipes!
And this one is really great!!! It has a little bit of everything: onions, parsley, tomatoes, bacon and green peas. You can use with any part of the chicken as well! The bacon will give the chicken a crispiness and a delicious flavor. You can even add some cheese if you like!
My favorite is the peas. I always love peas with chicken. There’s even suggestions that eating more peas and vegetables can make you happy…..well it does for me!!
1 kg chicken breasts; may also be legs, or wings
2 tablespoons of flour
4-6 small tomatoes (sliced)
125 g bacon
1 large onion
1 garlic
1 tablespoon butter
150 g rice
300 g green peas
A bunch of green onions
1 tablespoon of chopped parsley
Salt and pepper to taste
Optional: 1 tablespoon of shredded cheese
Wash the chicken breasts (or legs or wings) thoroughly. Dry with paper towels. Sprinkle first with flour. Then sprinkle with salt and pepper.
Wash tomatoes well, remove the flesh, and cut them into cubes.
Cut
the bacon into cubes. Saute the bacon, allowing the fat to accumulate. Remove
just the bacon, and put on paper. Saute chicken parts with the remaining
fat until crispy.
While you’re doing that wash the onion and cut
into cubes. Saute the cubes over medium heat for five minutes with the
butter. (If you like, you can add one tablespoon of oil too. I always do
this when I have really good cooking oil).
Peel the garlic and cut into thin slices. Saute in a pan for a few
minutes with the onions. Then pour this over the crispy sauteing
chicken.
Next put in 150 g of rice with 300-350 ml of hot water into a cooking pot over medium heat.
(If you put the heat too high, the rice will burn). Add the fresh
green peas, sliced tomatoes, crispy bacon, chicken pieces, and season
with salt and pepper.
Cover and simmer for about 30 minutes. This should be stirred from time to time.
When
this step is done, pour everything into a baking dish. Chop the green
onions and parsley....
...and add to the ingredients in the dish. Bake
covered at 185°C/370°F for 20 minutes.
Season with some pepper to taste!
Crispy fried chicken recipes like this are a complete meal in themselves.
But like my Chef says it’s always nice to have a little salad on the side....
