Leftover chicken?

This easy chicken salad recipe is your best bet. Whether you're in a hurry or are short on time, this is easy to make, quickly.
2 chicken breasts baked or fried
salt and pepper to taste
red curry powder to taste
½ teaspoon of oil
1 small cabbage
2 tomatoes
1 onion
½ can of corn
chicken seasoning
2 teaspoons of oil
1 teaspoon of lemon juice
pinch of sugar
Cut the baked or fried chicken breasts into small bite size pieces. Place in a medium sized salad bowl.
Sprinkle the pieces with salt, pepper, and curry powder. Cover them with the of oil to get a nice shimmer to the chicken. Toss well to mix thoroughly. Set aside.
We make the dressing next.
Place all the ingredients for the dressing in a small bowl. Mix everything together well.
Pour the dressing over the seasoned chicken pieces. Let all this marinate for 10 minutes.
During this time you can finish the rest of the salad.
Chop the cabbage in to small leaves. Rinse and lightly dry with paper towels..
Peel and wash the onion. Slice into very small pieces. Wash and dry the tomatoes. Slice into small pieces as well. Then combine these with the corn in a large salad bowl.
Add the cabbage and toss well.
By now the marinating chicken should have had enough time to do its thing! Pour the chicken pieces into the large salad and mix all together.
This chicken salad recipe is perfect for something like a special picnic for two or if you have to serve a surprise last minute get together.
Even if your putting together a quick meal for your self, the leftover will keep well in the fridge.
