OK! I know - some of you don’t have much time.
But this fried chicken liver recipe is as simple as it gets.
I mean you'll be in tears of laughter!!...
What my friends (and my Chef!) and I love about chicken liver recipes like this is that you can go all out extravagant with the sides adding mashed potatoes or rice, and steamed or sauteed vegetables, along with a healthy garden salad, (and maybe even finish off with light dessert).
Why?
Because this recipe is so fast and so easy to make. It saves you so much time.
And even with the basic sides I suggest at the end of this page, you’ll have a healthy, yet exquisite meal!
So what are we waiting? We’re all hungry so let’s get cookin’!!
500 g of chicken liver
½ cup of flour
2 tablespoons of oil
1 tablespoon of finely chopped parsley
Salt and pepper to taste
Wash and remove any skins from livers, if necessary.
Separate into parts and pat dry with paper towels.
Mix the flour with some salt and pepper.
Toss the livers in the flour and pepper mixture. Coat the chicken livers well by rolling them thoroughly in the flour.
Over a low to medium heat, add 1 tablespoon of oil a medium size skillet. When it’s hot enough - presto! - add your livers. Give them plenty of ‘breathing room’ and sautée until nicely browned on the both sides.
Add a little more salt and pepper if you like and mix everything well. Sparkle it up with some finely chopped parsley and serve immediately.
It’s best when it’s fresh just off the pan.
Simple meals deserve simple sides. So serve our fried livers with pickles and baked potatoes!
