What’s so special about healthy chicken wraps?

You’re in control of the ingredients. You stay in charge. You get to pick the best of everything you want to put in them. And the best part….
They taste great!
Your mind and body will thank you too! There’s a feeling of accomplishment when you know you’re doing something right for yourself and your loved ones.
I really love the peppers. They’re a good source of vitamin C and add color to your meal! (Always a favorite with me!!)
350g of sauteed chicken breasts
3-4 leaves of lettuce
4-6 tablespoons of mayonnaise
1 medium cucumber
2-3 tablespoons of corn niblets
½ of each bell pepper: red, yellow, orange
4-6 tortillas
2 tomatoes
fresh chopped parsley
salt and pepper to taste

Place the mayonnaise in a medium size mixing bowl. Add a little bit of salt and pepper. Add the chopped parsley. Mix well.
Wash and dry the peppers.
Slice ¼ of each of the peppers into thin short strips. Add to the mayonnaise mix. Stir a few times to mix everything better. Set the remainder of the uncut peppers - we’ll use them later in the recipe.
Chop the sauteed chicken breasts into small pieces. Add these to the mayo mix also. Again stir a few times until everything is thoroughly coated.
Wash the lettuce. Dry it. Then chop it into small pieces.
Wash, dry, and slice the cucumber into thin strips.
Wash and dry the tomato. Cut into section wedges.
Finally, slice the remaining peppers into thin strips.
Place one tortilla flat on a plate. Add some of the mayo mix and lettuce onto it.
Follow that up with a few sliced peppers.
Next add the cucumber strips.
Add a few corn niblets after that.
Top that off with one or two tomato wedges.
Fold the bottom third of the tortilla up. Then wrap the ingredients together by rolling it up. You can use one or two toothpicks to hold to keep everything from bursting until you’re ready to serve and eat.
I’ve said it before: some meals practically serve themselves!! And this healthy chicken wraps dish is no exception.
But if you know my Chef, he’ll suggest a salad even for something like this. And why not?
Healthy is healthy! Having a side salad will make this meal a little more special. Especially when you serve it up for friends at an informal gathering.
