Voila! Here’s my very unique healthy coleslaw recipe. This is perfect for a quick lunch or dinner appetizer.
Cabbage is very popular in my native Poland. You might find this coleslaw to be very different from the traditional North American kind. That’s because I’m using my Mom’s recipe.
It’s very crispy and crunchy! It also has apples in it, which give it a very singular flavor. Yes, there is a sauce! But it’s more like a dressing and doesn't use mayonnaise.
So it’s almost like Mom used to make! And I also added chicken too!
200 g of chicken breast
2 tablespoons of cider vinegar
3-4 tablespoons of olive oil
1 tablespoon of soy sauce
1 tablespoon of sugar
1 tablespoon of mustard
⅓ cup of orange bell pepper strips
1 garlic clove
2-3 cups of shredded or sliced cabbage
1 medium onion
2-3 medium carrots
1 small apple
Salt and pepper to taste
Fresh chopped parsley
kitchen knife and chopping board
measuring spoons and cups
medium size saute pan (skillet)
cooking spoon
garlic peeler (optional)
medium size mixing bowl
large salad bowl
vegetable shredder
Wash the chicken thoroughly. Dry with paper towels.
Cut the chicken into medium pieces.
Place a medium sized pan over medium heat. Add 1 to 2 tablespoons of
olive oil. Place the cut chicken in the pan and saute for 10 minutes.
The sauteed chicken should have a nice golden color. Set aside when done to cool down.
Peel the garlic, and crush into very small pieces. Set aside.
In a medium sized mixing bowl add the following ingredients:
The soy sauce...
...the cider vinegar; two tablespoons of olive oil...
...sugar...
...and mustard.
Stir a bit to mix well.
Add the crushed garlic...
...and maybe a little salt and pepper to taste. Mix thoroughly once more...
...and set the dressing aside.
Now we’ll work with the main ingredients. Wash all the veggies completely.
Slice the orange bell pepper into strips. Place into a large salad bowl.
Next, slice or shred the cabbage until you have about 2 to 3 cups worth. Place that into the bowl.
Chop the onion into small pieces, and place into the bowl.
Shred the carrots and place them into the bowl.
Peel the apple and cut into thin one inch squares. Add to the bowl.
Finally add the sauteed chicken.
Mix everything well. Pour the dressing we made earlier over everything.
Mix it all one more time to blend really well.
If it still needs some, add a bit more salt and pepper.
Pour some fresh parsley and your meal is ready.
