Here's a zesty Lemon Chicken Recipe soup idea that will surprise your dinner guests!
It's amazing the difference one little ingredient can make to the final flavour of this fantastic feast! And in this case, it’s the lemon in this recipe for chicken soup.
And it only takes a little bit as you'll soon find out! A very little goes a long, long way….
1.5 litres of hot water
500 g chicken breast fillets
1 onion
2-3 cloves garlic
A few grains of whole black pepper seeds
4 stalks celery
100 g of rice
parsley for sprinkling
½ teaspoon lemon rind
Lemon Juice (from one freshly squeezed lemon)
Salt, sugar to taste
First, wash the chicken breasts well and make sure there is no greasy residue. Cut them into small cubes.
Wash, peel and dry the onion. Chop it into small pieces.
Cut the garlic into small pieces.
Crush the seeds of pepper.
Wash the celery, and cut into thin slices.
Place the chicken into a tall cooking pot. Next add the onions, garlic, celery and crushed black pepper. Pour in the hot water and cover the pot with its lid.
Cook slowly over a low heat for about 30 minutes.
After that, we add the rice, and continue cooking until the rice is soft. You should stir often to make sure the rice does not stick to the pot.
Remove from heat.
Now add the rest of the ingredients.
Lemon juice: Be Careful! Add slowly to taste because if you add too much you can't take it out.
Finally add the lemon zest, sugar and salt to taste.
You can and should sprinkle this soup with parsley.
A little is always welcome with soup.
For that extra spark you might add just a hint of mint. This will add color to your soup, and also tastes great!
