This Recipe for Chicken Salad is so simple to prepare, even my Chef can make it! What makes this recipe so very special is if you use ingredients from your own garden!
Why?
Good question!
Having fresh ingredients picked from your own garden is ultimately the best - first - because you don’t have to go far to pick them up!! :)
Second - and most important - ingredients you use from your own garden gives you the absolute best taste and freshness.
And with me it always brings back wonderful memories of my childhood living on the farm in the mountains of Poland, especially when I take in that wonderful aroma of the fresh veggies.
So let’s get started. Ready, Chef?
300 g baked chicken breast |

cooking pot & cooking spoon
kitchen knives & chopping board
measuring spoons
medium size salad bowl
mixing spoons (for salad)
peeling knife (for potatoes)
Wash and scrub the potatoes. Place the potatoes (with their skins) in a pot and fill with hot
water to just cover the potatoes.
Add just a dash of salt (10 - 20
grains) and a tiny dab of butter. The butter will give the potatoes
colour, taste and help retain the vitamins. It will also prevent the water from splashing out once it begins boiling. Boil for 10 to 15 minutes.
In the meantime, select your pickles. Once you've done so, dice into small cubes. Place in a medium size salad bowl.
Wash and dry your apples. Dice them as well. To make it easier, cut them first into slices. Add to the salad bowl.
Your potatoes should be done by now. Remove from heat and drain with cold water. Peel the potatoes. Then chop them into small pieces. Add to the bowl.
Peel the hard-boiled eggs.
Chop the into cubes. Then add them to the bowl.
Cut baked chicken into medium cubes and add to the bowl. Season with the dill.
Add olive oil and mayonnaise. Mix gently. Season with salt and pepper.
Leave in a cool place until ready to serve.

For a variation on this dish, you can leave out the apples and add mustard instead.
