This Spicy Chicken Peanut Pasta is saucy, but not sexy!
So if you're ready for something spicy (...and I don’t mean male dancers!) then you’re ready for my dish!
And my friend Anthony will like this spicy recipe too because he loves peanuts!
…And no!! He is NOT one of the male dancers......really!
You can spice up your evening by making the delicious peanut and pasta recipe!
4 boneless skinless chicken breasts
1 yellow pepper
1 medium cucumber
2 medium carrots
1-2 limes
2 tablespoons of soy sauce
2 garlic cloves
cayenne pepper to taste
1 tablespoon olive oil
1 finely chopped onion (optional)
300 - 400 g of noodles
2 tablespoons of peanut butter
1 - 2 tablespoons of honey
1 tablespoon soy sauce
1 tablespoon of oil
2 tablespoon toasted sesame seeds
1 tablespoon of fresh chopped parsley and dill
1 - 2 tablespoons crushed peanuts

Wash the chicken breasts thoroughly. Dry on paper towels. Cut into one-inch cubes. Set aside for now.
Wash the pepper, cucumber and carrots. Peel the carrots. Cut all the veggies into thin slices or strips.
Create the lime zest by grating the lime peel into a bowl.
In a small bowl, mix together lime juice and zest, soy sauce, garlic, cayenne pepper, and olive oil. If you're using the chopped onion, you can use it here now.
Stir well. Then add the chopped chicken breasts.
Place mixture and chicken breasts in a large plastic bag and press air from bag to cover chicken with sauce. Marinate one hour in the fridge (or overnight - if you have time).
Remove breasts from bag. Heat over medium heat until thoroughly cooked. Set aside when done.
While your heating the chicken marinade, you can cook noodles according to instruction. When done, drain and set aside.
Now for the sauce-y part! ;)
In a medium pan, add peanut butter,
honey, soy sauce and oil. Heat all of the ingredients for 2 - 3 minutes
over low to medium heat. Make sure the peanut butter is melted. Remove
from heat and stir well.
If you're using them, add in the sesame seeds and continue mixing.
Add cooked noodles, cucumber, carrots, yellow pepper. Then, gently toss all the ingredients, well.
Top with the cooked chicken marinade. If you're these, sprinkle with parsley, dill and peanuts.
Of course, serve this spicy chicken peanut pasta meal while it's still warm! A little side garden salad will also perfectly compliment this dish!
