Apples and Stuffed Chicken Breasts???

Well why not?!

There’s hundreds of ways to do chicken! Apples and chicken with sage is the perfect roasted chicken recipe to try out. Especially for Christmas!




But this easy chicken recipe is perfect to try any time, not the just holidays. And any time is a great excuse to try something new, especially something as yummy as this!

I love the combination of chicken and apples. Especially with just the right amount of different spices.

And after you’ve finished, this gorgeous and simple stuffed chicken breast recipe - its flavour, its juicy-ness, and its softness - will make not just you happy, but everyone you serve it to!

Ingredients (Serves 4-5 apples):

1 kg of boneless chicken breasts
500 ml bread cubes
1 onion
2 celery
2 apples
8 freshly chopped sage leaves
5 ml chopped thyme
10 ml of freshly finely chopped parsley
Salt pepper to taste

Directions:

Preheat oven to 190°C/375°F.

Peel and wash the onion. Chop into small cubes.

Wash the celery. Trim off the rough ends. Cut into small slices.

Wash and peel the apples. Cut away the core and chop into small cubes.

In a bowl, add and combine the bread cubes, sliced celery, chopped onion, apples, sage and thyme. Mix well. This is our stuffing!

Wash the chicken breasts. Dry on paper towels.

Next, place chicken breasts on a cutting board. We’re going to cut the chicken breasts in such a way so as to place the stuffing inside.

Carefully cut a deep pocket inside each chicken breast. You need to be sure the other three sides have no seams or splits. Other wise the stuffing will fall out! Keep the pockets small to make sure of this. They should be about 6 - 8 cm long and 5 - 6 cm deep - it will depend on the size of each breast.

Start to spoon the stuffing into each breast. Make sure the stuffing is nicely wrapped inside.

Around the open end of chicken, use butcher’s string to tie off the opening to help keep the stuffing inside.

Brush the stuffed breasts with oil. Rub with salt and pepper. Then transfer each chicken breast to a roasting pan.

Roast evenly for about 30 minutes. Remove from oven and let everything cool just a bit.

The perfect complement for these very flavorful apple stuffed chicken breasts is something light.

So to start serve with salad, and have lightly steamed spinach and vegetables of your choice as a side dish.
